One of my favorite dishes of all time. Well worth the effort to get the eggplant ready 😀 Compliments any dish, especially Rice and curry. 

Ingredients:

1 Eggplant, sliced thin

2 Red Onions thinly sliced

2 Tomatoes thinly sliced 

Salt

Coarse Black Pepper (ground works too) 

Juice of 2 – 3 limes

oil 

2 Serrano Chilies (optional)

1/2 tsp turmeric

1 cucumber thinly sliced (optional)

Prepare the eggplant by slicing it in half and then cutting into long strips and slicing those strips into thin eggplant slices. Have a dish with 1/2 tsp turmeric, a little salt and 1/2 cup water. Put the cut up eggplant slices into this mixture to keep it from turning brown. 

In a deep saucepan heat oil so it is hot enough to deep fry. Taking care to stand away from the oil, take a handful of the eggplant, drain the water and with a slotted / frying spoon, put it into the oil to fry until brown. When the eggplant enters the oil, it can splatter because of the little bit of water in the eggplant. Fry the whole eggplant until brown and blot out the oil using paper towels. Your eggplant is now ready. 

In a deep dish mix the onions and tomato, salt, pepper, chili (optional) and mix well. Add the fried eggplant and mix thoroughly. Add the juice of 2 – 3 limes and salt to taste. Enjoy with rice and curry.
