Yum! Yum! Yum! That is what my 13 year old said to me the other day when I made this. She liked it so much that she ended up eating more of this than rice. Even if you are not an Okra lover, cooking it this way takes away the slime and actually makes the Okra taste great.. Bandakka is pronounced Bun-duck-kah.
Ingredients:
1 lb Okra, Cut up into small pieces (I prefer the cut-up frozen Okra)
2 Large onions, chopped
5 Whole dried chilies (optional)
1/2 – 1 tsp Minced Garlic (based on your taste preferences)
Oil
1 tsp Crushed or powdered chili
Salt
In a skillet heat oil until hot and add the onions, chili powder and a little salt and start cooking the onions. When the onions are cooked about halfway through add the Okra, garlic and whole chilies and cook on high until the onions / Okra is fully cooked. Add salt to taste and enjoy.

Agree. Easy and simple. But why do Sri Lankans omit the steps ( Step 1, Step 2….). Isn’t cooking a “process”? Steps would help to organize and make things even simpler. Keep all the inputs ( ingredients, spices….) separately and needed in each step.
